Our sorghum is certified organic and non-GMO and comes in 6 gallon buckets (or pails... another word for the same container) that hold 40 lbs. net weight. When you store organic sorghum at home, it needs to be protected in a number of ways. First, it needs to be protected from various critters that will get to it before you. For example, weevils and rodents. You also need to protect your organic sorghum from absorbing too much additional moisture, which can be absorbed from the atmosphere. The barrels in which our organic sorghum is packed provide comprehensive protection against these storage risks. They have airtight gasket sealed lids, mylar liners, and oxygen absorber packs to remove oxygen from the air in the bucket after we put the lid on. An oxygen absorber leaves a nitrogen atmosphere in the barrel, since air consists almost entirely of oxygen and nitrogen. (The deoxidizer packaging itself is fully food safe, made of iron powder and salt, separate from the product itself.) Our barrels safely deter pests, and biological processes are "shelved" in mylar protection, oxygen-free nitrogen atmosphere, allowing your organic sorghum to enjoy complete peace and quiet until the time you want to use it.
