THE OLIVE Ursini is located in Fossacesia in the heart of Abruzzo, a green region of Europe with three national parks and the stunning Costa dei Trabocchi. This wonderful land has always been olive-growing, where quality of life and ancient values cannot be compromised, as in the production of Ursini. For us, true excellence can only be achieved through direct and personal commitment, not entrusted to a third party. Our olive groves, home olive presses, in-house laboratories and directly controlled distribution are part of the chain. Providing the best product is our commitment to our roots and to our great patriarch, that century-old olive tree from the 18th century looking down proudly from the gardens of San Giovanni in Venere Abbey. THE KITCHEN Ursini stands out from the rest: no old factory, no industrial area, but an ancient site dedicated to olive pressing and a new, cozy little brick structure of over 1,400 square meters surrounded by olive groves. There is space for warehouses, offices and above all the kitchen where all our specialties are prepared: in the center of the surface area. The machines are also special, tailor-made for our unique culinary techniques and soft pasteurization. We only trust our olive mills. A key belief of Ursini is that true quality can only be achieved by direct means. This principle guides our choice to use only the family's own olive mill. Using our own factory allows us to optimize our work with the olives, blending precisely to ensure the quality of the oil:. Working within four hours from harvesting, pressing type, kneading time and temperature, single variety processing, centrifugal selection and soft separation. Ursini is independent. We are not limited by the parties we employ and their production standards. Our quality is never compromised by outdated extraction methods.
