1. Introduction:

Alkaline protease is a solid enzyme produced by submerged fermentation of Bacillus licheniformis according to GB/T23527-2009 (China) specification. Widely used in food additives, detergents, leather depilation and softening, silk degumming, heparin sodium, chondroitin, etc.

1 gram of solid alkaline protease powder hydrolyzes casein within 1 minute at 40°C and pH 10.5 to produce 1 μg of tyrosine, which is defined as 1 unit of enzyme activity and expressed in u/g.
