Lentils are high-protein legumes that are dried, soaked and cooked before eating. Lentils come in various sizes and are sold in many forms, with or without the skin, whole or split. Canada is now the world's largest exporter of lentils, selling to more than 100 countries each year. The most commonly grown lentils are the large green "Laird" lentils and the red lentils.
Types of red lentils
whole red lentils: Whole red lentils are 1/2 cm wide with a mild earthy flavor and soft texture. These lentils are deep red in color with a deep orange-red color. Whole red lentils are traditionally used as a meat substitute.

Peeled whole red lentils (also known as: footballs): Red footballs are also made from whole red lentils. Remove the skin from the lentils, leaving the insides of the seeds whole (without splitting). The result is a beautifully intact product with a reddish-orange finish.
Split Red Lentils (also known as: Lentille, Masoor, Mercimek): Split red lentils are made by splitting whole red lentils. Remove the skin, then split the remaining reddish-orange seeds in half. Canadian product, one of the best known in the world for its quality.
