The cabbage is marinated for 2 hours, and between turning over, you can make porridge:

Combine water and sweet rice flour in a small pot. Stir well with a wooden spoon and cook over medium heat for about 10 minutes, until bubbling. Add sugar and cook 1 minute more, while stirring. Remove from heat and let cool completely.

Pour cooled porridge into a large mixing bowl. Add garlic, ginger, onion, fish sauce, fermented salted shrimp and chilli flakes. Mix well with a wooden spoon until the mixture becomes a thin paste.

Add the radishes, carrots, and scallions, plus the Asian chives (or more scallions) and cress (if you're using). Mix well.

If the cabbage core sticks out too much, trim it off.
To split a cabbage in half without tearing the dense leaves inside, first cut a short slit in the bottom of the cabbage just enough to catch the halves, then gently pull the halves apart to split the cabbage.


Cut a slit in the core of each half, 2 inches above the stem. You want the cabbage leaves to be loose but still attached to the core.

Wet the halves by submerging them in a large basin of water. Sprinkle the salt between the leaves by lifting each leaf and filling it with salt. Use more salt closer to the stem, where the leaves are thicker.

Cabbage Kimchi

Let the cabbage rest for 2 hours. Turn them every 30 minutes so they are fully marinated. If you like, you can occasionally scoop some salt water from the bottom of the pot and pour over the cabbage.

After 2 hours, halve the cabbage and wash it several times in cold water. Wash them well to remove salt and any dirt. When you're done washing, divide the halves into quarters along the seam you cut earlier. Cut off the cores and put them in a strainer over the pot so they drain well.
