Vietnamese soy sauce

Soy sauce is a condiment made from soybeans. Vietnamese soy sauce is widely used to enhance the flavor of many traditional dishes such as noodles and pasta. In Vietnam, there are three main types of soy sauce, which are labeled as follows:

  • Standard, not described or described as thanh vi, which means light. In terms of consumption, this is the most popular, as it can be poured directly over light-tasting dishes.

  • A dark, thick and concentrated variety called dam dac or hao vi. This sauce is too thick to use directly, so it is often used as a base for dipping sauces with water or vinegar.

Vietnamese Soy Sauce Standard

  • Naturally brewed soy sauce:

Aspergillus oryzae and/or Aspergillus sojae fermented or brewed soybeans or mixtures of soybeans and grains: bacteria and/or molds and/or yeasts, with salt and with/without sweeteners.

  • Non-brewed soy sauce: Hydrolyzed soy sauce:

Acid or enzymatic hydrolysis of soybeans and/or defatted soybeans, defatted peanuts with salt and with/without sweeteners.
